Crumpets, Chile con carne, pizza, apple crisp, and granola

An easy cooking day. Doing a little catch up. I have to admit, I love the challenge of planning our meals, keeping up with bread and yogurt needs. We tried my ginger ale yesterday and it was delicious.

I think I will eventually create a meal page for this blog, but for now. Yesterday I had oatmeal for breakfast, leftover soup for lunch and left over loin of pork in an apricot sauce for dinner, with chocolate pudding for dessert.

Although I cooked a bunch today it’s not necessarily what we are eating today.

I had a peanut butter and jelly sandwich with an apple for breakfast while I walked to the lighthouse. We had leftovers for lunch. Tonight it’s pizza for dinner and an apple crisp.

Ginger Ale Recipe,

Use a plastic soda bottle.

  • Grate 1.5 TBS ginger
  • Juice a lemon
  • 1/4 tsp yeast
  • 3/4 cup sugar
  • water to fill the bottle

Shake it all up and let it sit at room temp for 2 days. Squeeze the bottle periodically to make sure it’s not about to explode. Put it in the fridge

Of course,  you could also go to your local market and pick up a bottle.fullsizeoutput_e14
