Cook’s night off, meals 79 – 84

Yesterday was a whirlwind of cooking and today was not. Yesterday started with buttermilk pancakes for breakfast. This was followed by fresh pizza for lunch. The day was completed with one of my favorite chicken recipes, from my daughter. Chicken breasts with balsamic vinegar and onions. This was accompanied by risotto and baby carrots, broccoli and string beans from the garden. The grand finale was an apple rhubarb pie.

Today was easy. I had poached egg and toast for breakfast. Lunch was hummus and fresh tomatoes. Tim had pizza.

And…we went out for dinner. That’s right. I didn’t cook. We were invited aboard a “flash” yacht. We dined on gorgonzola cheese, calamata olives with crackers and my hummus. Dinner was fresh lemon pepper tuna (caught off Hobart), grilled chicken, fresh salad. And curried rice and peas. It was delicious and I didn’t have to lift a finger!
