I had a major housework today and kept the cooking simple.
I made a batch of bagels in the morning for later use.
I had oatmeal with apples and raisins for breakfast. Tim had his usual.
Lunch was leftovers, ravioli, fried tofu with peanut sauce and stir fried veggies.
Dinner was grilled chicken, carrots, string beans, a baked potato, and a self saucing pudding for dessert.
Self saucing pudding is a marvel. It’s a combination of cake and pudding that is baked in the oven. Cake with a pudding center. I discovered it last time we were here and have added it to my cooking repertoire. You make a cake, sprinkle cocoa on top, then pour boiling water (or coffee) over the whole thing and bake. It’s delicious.
